It's Tailgating Time

School has started...there have been days where the Temperature is only in the 80's....and people are beginning to refer to what does this mean? It's about time for a little Mountaineer Football! For my fellow Appalachian alumni, you share in this excitement with me. What comes with football? Tailgating! I have recently started my own cooking class at work entitled "You Can Cook:"..and next month's theme is of course "You Can Cook: Tasty Tailgating Treats" .. you can imagine how much fun I've had testing recipes! Here's a unique recipe I found that was really tasty! Let's hope my class likes it next month!

Edamame Dip (instead of your typical guacamole dip)

  • 1 pound shelled edamame (these soybeans are available in the frozen-foods section at grocery stores)
  • 1 teaspoon salt
  • 1 tablespoon chopped garlic
  • 5 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon sugar
  • 1/2 teaspoon pepper
Puree all the ingredients in a food processor or blender until the mixture is smooth. Makes 2 1/2 cups. Serve with store bought or homemade tortilla chips!

.::New to the Blogging World::.

So after months of being obsessed with reading tons of blogs, I've finally caved in and created my own. I keep thinking to myself.....who in the world would actually care to read it? And yet somehow I've gotten you interested enough that you are here and reading this...right? :) Well, welcome to my blog full of silly, fun, nonsense.  I plan to share crazy stories of my life along with lots of dancing and nutrition-related "stuff". I hope you enjoy!

Let me start by telling you how much fun I've had finding new recipes this summer for all of my summer garden veggies! ...and yes, i know this makes me sound like a typical, boring dietitian...but I want to introduce you to one of my favorites....Veggie Couscous. (Don't be nervous!) Do you have lots of squash, zucchini and bell peppers from your garden? Give this recipe a try. It's fresh--summery--light and I promise you will love it!

Veggie Couscous
Adapted from Healthy Family Meals

3/4 cup uncooked couscous
1/2 cup frozen green peas
1 cup vegetable broth
1 zucchini, chopped
1 yellow squash, chopped
1 bell pepper, chopped
Cilantro bunch, chopped
Olive oil
Salt and pepper

1. Cook the couscous according to the directions, using vegetable broth and adding the frozen peas. Set aside.
2. Sautee the zucchini, squash and bell pepper with a little olive oil until tender but still slightly crunchy. Season with salt and pepper.
3. Add the couscous and vegetables. Squirt lime juice and add cilantro. Serve warm or cold.
